What is Aodake-uchi?

Aodake-uchi is a fun, old-school way of making ramen noodles -- using a big green bamboo stick! You sit with one leg over the bamboo, then hop and bounce with your other leg to flatten the dough using your body weight.
It's part workout, part noodle magic! This traditional technique came from China and spread across Japan during the Meiji and Taisho periods (1868-1926), way back when ramen was just getting started.
Today, it's still going strong in Sano, Tochigi -- a town famous for bamboo-pressed noodles.
The result? Soft, springy noodles with a smooth texture and tiny air bubbles that make every bite delicious!
